Cauliflower Fried Rice with Tofu Stir-Fry
This is comfort food and nutrition rolled into one, and takes about 20 minutes start to finish!

| 2 bags cauliflower rice | |
| 2 eggs | |
| ( bag of frozen mixed veggies (peas, carrots, corn) | |

Directions

Spray a wok or non-stick frying pan with olive oil spray and place on medium heat. When pan is sizzling hot, pour in frozen riced cauliflower. Stir until it starts to get light golden in color. Add frozen veggies, stir for another five minutes. Add a few splashes of soy sauce and mix in. Make a well in the middle and pour in the two eggs. Stir around to distribute the egg. Sprinkle with sliced chives or scallions before serving.
If you like deeper flavor, sprinkle rice and veggies with a seasoned mix like Trader Joe's Green Goddess, or use toasted sesame oil. Serve with Tofu Stir-Fry, or chicken or meatballs. Pairs nicely with various proteins, but oriental style works best!
