Citrus Bok Choy Salad

A fresh, tangy salad with plenty of texture and flavor! Use fresh grapefruits and oranges for best results – none of that canned stuff from overseas here!

| 1 bunch bok choy | |
| 1 orange | |
| 1 pink grapefruit | |
| 1/2 cup pomegranate arils | |
| 1 cup sugar snap peas, halved | |
| 1 bunch scallions, sliced | |
| ( Honey Garlic Ranch) | |
| 1 cup mayonnaise | |
| ½ cup coconut or soymilk | |
| 2-3 tablespoons honey | |
| 1 tablespoon minced or dried garlic | |
| 1 tablespoon spicy mustard (optional) | |
| 1 teaspoon salt | |
| ½ teaspoon pepper |
Directions

Wash, dry and slice bok choy into thin slices. Place in medium sized salad bowl. Separate orange and grapefruit segments and
add to salad, along with arils, snap peas and scallions.
Measure a cup of mayo into a small bowl. Use a whisk or fork to beat it for a few seconds to achieve a smooth consistency. Add remaining ingredients and whisk again. Dress salad lightly and toss just before serving.
