Maple Glazed Orange Sheet Pan Chicken

This colorful, tasty dish incorporates naturally derived sweetness – rich, thick maple syrup and golden carrots. Combined with freshly ground black pepper and fresh citrus, it makes for a fabulous, flavorful bite.

Ingredients

8 pieces dark chicken
3-4 carrots, peeled and bias sliced
3 oranges, quartered, for cooking
( zest and juice of one orange)
1/4 cup honey
1/2 cup maple syrup
1 teaspoon salt
1 teaspoon pepper
1 tsp dried cardamom
2 oranges, for serving
3-4 crushed allspice pods (or 1 tsp allspice)
1/4 tsp guar gum, optional

Directions

Lay chicken skin side up in a large roasting pan. Add carrots. Mix orange juice, zest, sweeteners and spices together with guar gum. Wisk until ingredients are fully blended. Pour over chicken. If time, marinade for 12-24 hours. Bake at 350 uncovered for one hour, add orange segments and baste with pan juices, and bake for another half hour. When ready to serve, discard cooked orange segments and replace with fresh ones.
