| 8oz spinach, washed, checked, and dried (arugula also works well) | |
| 2 fennel bulbs, thinly sliced (can sub jicama or baby bok choy) | |
| 1 green apple, thinly sliced | |
| 2tbsp chopped parsley or dill (or use Dorot cubes) | |
| 1/2 cup olive oil | |
| 3-4Tbsp lemon juice | |
| 3-4tbsp apple cider vinegar | |
| Squirt of stone ground mustard (or mayonnaise) | |
| salt | |
| pepper | |
| garlic powder |
Directions
1.
Whisk or shake up dressing ingredients.

Layer spinach, fennel, and apple in a large bowl.

Serve with dressing on the side, or dress lightly just before serving.
