Spinach, Fennel & Apple Salad

Ingredients

Adjust Servings
8oz spinach, washed, checked, and dried (arugula also works well)
2 fennel bulbs, thinly sliced (can sub jicama or baby bok choy)
1 green apple, thinly sliced
2tbsp chopped parsley or dill (or use Dorot cubes)
1/2 cup olive oil
3-4Tbsp lemon juice
3-4tbsp apple cider vinegar
Squirt of stone ground mustard (or mayonnaise)
salt
pepper
garlic powder

Directions

1.
Whisk or shake up dressing ingredients.
Mark as complete

Layer spinach, fennel, and apple in a large bowl.
Mark as complete
3.
Serve with dressing on the side, or dress lightly just before serving.
