Cole Slaw with Corn & Scallions

Perfect for a summer barbecue or picnic, or Shabbos lunch. Serve with fish, deli, or burgers!

Ingredients

Adjust Servings
1 bag cole slaw (shredded tri-color cabbage)
1/2 bag shredded carrots
8 oz can yellow corn, drained and rinsed
3-4 stalks scallions, trimmed and chopped
( Cole slaw dressing)

Directions

1.
Mix cole slaw with dressing. Stir in half the can of corn and the chopped scallions and mix again. (Toss the 'intersection' of the stalk and the shoots, that's where bugs tend to hang out!). To make your own dressing, mix about a cup of mayo with 1/4 cup white vinegar, 1/2 cup sugar or sweetener, salt and pepper. Shake well!
