Ingredients

Red beets
Golden beets
Shallots
Sweet potatoes

Directions

1.
Peel the beets and sweet potatoes. Cut into 2" chunks. Peel and slice shallots. Spread them out on a parchment lined baking sheet.
Mark as complete

Drizzle with olive oil and some spices and bake at 375 until soft and edges are crisp.
